Chettinad Chicken Curry is a fiery and aromatic South Indian delicacy. Ingredients

  • Chicken - 1 kg, cut into pieces
  • Onions - 2 large, finely chopped
  • Tomatoes - 2 medium, finely chopped
  • Ginger-garlic paste - 2 tbsp
  • Chettinad Masala Powder - 4 tbsp
  • Turmeric powder - 1 tsp
  • Red chili powder - 1 tsp (optional)
  • Coconut oil - 3 tbsp
  • Curry leaves - 2 sprigs
  • Coriander leaves - for garnish
  • Salt - to taste
  • Mustard seeds - 1 tsp
  • Fennel seeds - 1 tsp
  • Cinnamon stick - 1 inch

Instructions

    Heat coconut oil in a large pot or Dutch oven.

    Add mustard seeds and fennel seeds. Let them splutter.

    Add cinnamon stick and curry leaves. Sauté for a few seconds.

    Add chopped onions and sauté until golden brown.

    Add ginger-garlic paste and sauté for another minute until the raw smell disappears.

    Add chopped tomatoes and cook until they soften.

    Add turmeric powder, red chili powder (if using), and Chettinad masala powder. Sauté for 2-3 minutes.

    Add the chicken pieces and salt. Mix well to coat the chicken with the masala.

    Cook the chicken on medium heat, stirring occasionally, until it's well browned and the water released by the chicken has evaporated.

    Add 1-2 cups of water, bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the chicken is cooked through and the gravy has thickened.

    Garnish with coriander leaves and serve hot with rice or roti.
