Ingredients

  • 2 Parottas (store-bought or homemade)
  • 2 Eggs
  • 1 medium Onion, finely chopped
  • 1 medium Tomato, finely chopped
  • 1-2 Green Chillies, finely chopped (optional)
  • 1/2 tsp Ginger-Garlic Paste
  • 1/2 tsp Red Chilli Powder
  • 1/4 tsp Turmeric Powder
  • 1/2 tsp Garam Masala
  • Salt to taste
  • 2 tbsp Oil
  • Fresh Coriander Leaves for garnish

Instructions

    Shred the parottas into small pieces.

    In a bowl, whisk eggs with salt, red chilli powder, and turmeric powder.

    Heat oil in a pan or tawa. Add onions and green chillies (if using) and sauté until golden brown.

    Add ginger-garlic paste and sauté for a minute.

    Add tomatoes and cook until they soften.

    Pour the egg mixture into the pan and scramble until cooked but still slightly moist.

    Add the shredded parottas to the pan and mix well with the egg and spices.

    Sprinkle garam masala and salt. Mix well and cook for another 2-3 minutes.

    Garnish with fresh coriander leaves and serve hot.
