Nannari Sherbet, or நன்னாரி சர்பத், is a deeply refreshing and naturally cooling beverage cherished throughout Tamil Nadu, particularly during the scorching summer months. Made with the syrup extracted from the fragrant roots of the Nannari plant (Indian Sarsaparilla), this drink offers a unique earthy sweetness balanced with a touch of citrus.   • 4 tbsp Nannari Syrup
  • 4 cups Water (cold)
  • 1 tbsp Lemon Juice
  • as needed Ice Cubes
  • 1 tsp soaked Sabja Seeds (optional)

Instructions

    Step 1: Begin by preparing the Nannari syrup. While commercially available, homemade syrup offers superior flavour. To make it, wash and scrub 1 kg of Nannari roots thoroughly to remove any dirt.

    Step 2: Chop the cleaned Nannari roots into small pieces. This helps in easier extraction of flavour.

    Step 3: In a large pot, combine the chopped roots with 4 liters of water. Bring the mixture to a boil over medium-high heat.

    Step 4: Reduce the heat to low and simmer the mixture for about 2-3 hours, or until the water reduces by half and the liquid turns a deep amber colour. The aroma of Nannari will fill your kitchen.

    Step 5: Strain the liquid through a fine-mesh sieve or muslin cloth, pressing down on the roots to extract all the flavour. Discard the spent roots.

    Step 6: Return the strained liquid to the pot. Add 2 kg of sugar (adjust to taste depending on the desired sweetness).

    Step 7: Cook over medium heat, stirring constantly, until the sugar is completely dissolved and the syrup thickens slightly. This should take about 20-30 minutes. The syrup is ready when it coats the back of a spoon.

    Step 8: Allow the syrup to cool completely. Store in a sterilized glass bottle in the refrigerator. Homemade syrup can last for several weeks.

    Step 9: To prepare the sherbet, take a tall glass and add 4 tablespoons of Nannari syrup.
