Ingredients

  • 2 cups Cooked Rice
  • 3 large Tomatoes
  • 1 medium Onion
  • 1.5 tbsp Tomato Rice Powder
  • 1 tsp Mustard Seeds
  • 2 tbsp Peanuts
  • 1 sprig Curry Leaves
  • 2 tbsp Oil

Instructions

  1. 1

Step 1: Prepare the tomato puree: Thoroughly wash 3 large, ripe tomatoes. Roughly chop them and blend them in a blender until you achieve a smooth puree. Set aside.

  2. 2

Step 2: Tempering the spices: Heat 2 tablespoons of cold-pressed sesame oil in a heavy-bottomed kadai or pan over medium heat. Ensure the pan is adequately heated before adding the mustard seeds.

  3. 3

Step 3: Mustard seeds and peanuts: Once the oil is hot, add 1 teaspoon of mustard seeds. Allow them to splutter and pop, about 30-45 seconds. Then, add 2 tablespoons of raw peanuts. Fry them until they turn golden brown and release their nutty aroma, about 2-3 minutes. Be careful not to burn them.

  4. 4

Step 4: Curry leaves: Add 1 sprig of fresh curry leaves to the pan. Sauté for a few seconds until they become fragrant, about 15-20 seconds.

  5. 5

Step 5: Sautéing the onions: Add 1 medium-sized onion, thinly sliced, to the pan. Sauté over medium heat until the onions turn translucent and light golden brown, about 5-7 minutes. Stir occasionally to prevent burning.

  6. 6

Step 6: Cooking the tomato puree: Pour the tomato puree into the pan. Add 1.5 tablespoons of Tomato Rice Powder (Thakkali Sadam Podi). If you don't have the powder, you can substitute with a mix of red chili powder, coriander powder, turmeric powder, and garam masala (adjust quantities to taste).

  7. 7

Step 7: Simmering the masala: Reduce the heat to low and simmer the tomato-spice mixture, stirring occasionally, until the oil begins to separate from the sides of the pan. This usually takes about 8-10 minutes. The mixture should thicken slightly and the raw smell of the tomatoes should disappear.

  8. 8

Step 8: Adding the cooked rice: Gently add 2 cups of cooked rice to the pan. Use long-grain rice like Basmati or Sona Masuri for best results. Ensure the rice is slightly cooled before adding it to prevent it from becoming mushy.

  9. 9

Step 9: Mixing the rice: Gently mix the rice with the tomato-spice mixture, ensuring that the rice is evenly coated with the masala. Be careful not to break the rice grains.

  10. 10

Step 10: Simmering the rice: Cover the pan and simmer the rice over low heat for about 5-7 minutes, allowing the flavors to meld together. Stir gently once or twice during this time.

  11. 11

Step 11: Final touches: Check the seasoning and add salt if needed. Garnish with freshly chopped coriander leaves before serving.

  12. 12

Step 12: Serving: Serve the Thakkali Sadam hot, accompanied by raita (yogurt dip) or papadums for a complete and satisfying meal.

    --- Chef Tips ---

  14. 14

Pro tip: For an extra layer of flavor, add a small piece of jaggery (Indian unrefined sugar) while simmering the tomato puree. This will balance the acidity of the tomatoes and add a subtle sweetness.

  15. 15

Pro tip: The quality of the Tomato Rice Powder (Thakkali Sadam Podi) greatly impacts the flavor of the dish. If making it at home, ensure the spices are freshly roasted and ground for the best aroma.

  16. 16

Pro tip: To prevent the rice from sticking to the bottom of the pan, use a heavy-bottomed pan and keep the heat on low while simmering.

  17. 17

Pro tip: For a richer taste, you can add a tablespoon of ghee (clarified butter) along with the oil. This will enhance the aroma and flavor of the dish.

  18. 18

Pro tip: If you don't have cooked rice on hand, you can cook the rice directly in the tomato mixture by adding water according to the rice-to-water ratio. Adjust cooking time accordingly.
