Ingredients

  • Idli/Dosa batter - 2 cups
  • Onion - 1 medium, finely chopped
  • Green chilies - 2-3, finely chopped
  • Ginger - 1 tsp, grated
  • Curry leaves - 1 sprig, finely chopped
  • Coriander leaves - 2 tbsp, finely chopped
  • Mustard seeds - 1 tsp
  • Urad dal - 1 tsp
  • Oil - for cooking
  • Salt - to taste
  • Asafoetida (hing) - a pinch

Instructions

    In a bowl, mix idli/dosa batter with salt.

    In a small pan, heat oil and add mustard seeds and urad dal. Let them splutter.

    Add chopped onions, green chilies, ginger, curry leaves, and asafoetida. Sauté until the onions turn translucent.

    Add this tempering to the idli/dosa batter along with coriander leaves. Mix well.

    Heat a kuzhi paniyaram pan over medium heat and grease each mold with oil.

    Pour the batter into each mold, filling it about three-quarters full.

    Cover the pan and cook for 2-3 minutes, or until the bottom is golden brown.

    Flip the paniyarams using a skewer or spoon and cook for another 2-3 minutes, or until the other side is golden brown.

    Remove the paniyarams from the pan and serve hot with chutney or sambar.
