Ingredients

  • Toor dal
  • Mixed vegetables (drumstick, pumpkin, brinjal, etc.)
  • Tamarind pulp
  • Sambar powder
  • Turmeric powder
  • Asafoetida
  • Mustard seeds
  • Urad dal
  • Curry leaves
  • Coconut (grated)
  • Coriander seeds
  • Dry red chilies
  • Chana dal
  • Oil
  • Salt

Instructions

    Cook toor dal with turmeric powder until soft and mushy.

    Cook the vegetables separately until tender.

    Grind coconut, coriander seeds, dry red chilies, and chana dal into a fine paste with water.

    Heat oil in a pan. Add mustard seeds, urad dal, and asafoetida. Let them splutter.

    Add curry leaves and saute for a few seconds.

    Add the cooked vegetables, cooked dal, and tamarind pulp.

    Add sambar powder and the ground spice paste. Mix well.

    Add salt to taste and simmer for 15-20 minutes, allowing the flavors to meld.

    Garnish with chopped coriander leaves (optional).

    Serve hot with rice, idli, or dosa.
