Kavuni Arisi, or Black Rice Pudding, is a delectable dessert made with black glutinous rice, coconut milk, and jaggery. Ingredients

  • Black glutinous rice (Kavuni Arisi) - 1 cup
  • Coconut milk - 2 cups
  • Jaggery - 1/2 cup (adjust to taste)
  • Cardamom powder - 1/4 tsp
  • Water - 4 cups
  • Cashews - 1 tbsp, chopped (for garnish)
  • Raisins - 1 tbsp (for garnish)
  • Ghee - 1 tsp (optional, for roasting nuts)

Instructions

    Wash the black glutinous rice thoroughly and soak it in water for at least 4-6 hours or overnight.

    Drain the soaked rice and transfer it to a pressure cooker.

    Add 4 cups of water and pressure cook for 4-5 whistles, or until the rice is cooked and soft.

    Once the pressure is released, open the cooker and mash the rice lightly with a spoon or masher.

    In a separate pan, melt jaggery with a little water to make a syrup. Strain the syrup to remove impurities.

    Add the jaggery syrup to the cooked rice and mix well. Cook on low heat for 5-7 minutes, stirring continuously.

    Add coconut milk and cardamom powder. Simmer for another 5-10 minutes, stirring occasionally, until the pudding thickens slightly.

    If using, roast cashews and raisins in ghee until golden brown. Garnish the pudding with roasted nuts before serving.
